THE FERMENTATION & DOUBLE DISTILLATION
The agave juice is collected in large wooden vats and naturally ferments during 7 to 10 days with indigenous yeast. The result, called « El mosto », is then distilled.
Excellia™ is double distilled in copper pot stills. At the end of the first distillation, the low alcohol spirit is called « ordinario ».
It is only after the second distillation that the tequila base of Excellia™ is born.
